Short Cut Kare-Kare with Pork Alternative

Tonight, I cooked Kare-Kare for the first time. And since I don't eat oxtail or tuwalya and I don't like the taste of beef, I tried an alternative of using pork meat. Usually, Kare-Kare, a Filipino dish is best made with Peanut sauce, asuete and rice flour but I made a short cut and used Mama Sita's Kare Kare Mix.
Kare-Kare Recipe

1 pouch Mama Sita's Peanut Sauce(Kare Kare) Mix
dissolved in 1 cup broth
1.1 lb (1/2 kg) oxtail cut into 1 1/2 lengths
8 cups (2L) water
1 tsp (2.6g) minced garlic
1 pc (40g) sliced onion
7 pcs (100g) pechay (Bok Choy Leaves)
6 pcs (100g) sitaw (long green beans) - cut into 2" lengths
1 pc (100g) eggplant sliced into 1/2" lengths
1 tbsp (15ml) cooking oil
Bagoong (Sauteed shrimp paste)


1. Boil oxtail in water. Lower the heat and simmer until meat is very tender, adding water as needed leaving about 1 1/2 cups broth

2. In a heavy saucepan, saute garlic and onion in oil. Add oxtail, stri fry and pour in dissolved Mama Sita's Kare Kare Mix. Add the remaining broth.

3. Stir and simmer until sauce thickens then add the eggplant ang long green beans. Simmer for 3 minutes more stirring occasionally.

4. Lastly, add pechay (bok choy leaves) and simmer for 2 minutes or until vegetables are done. Serve with bagoong (sauteed shrimp paste) and rice.
